Choppy Eggs or Breakfast this week

Today I ate this for breakfast:


I love soft boiled eggs.  I seriously have eaten a piece of prosciutto and soft boiled eggs for breakfast every day this week.  Is that weird?  Maybe but it sure does taste good to me!

Here's how I make them.  Boil a small saucepan of water on the stove and using a spoon, ease two eggs, one at a time, into the boiling water.  If you try to drop them in, they will crack and the whites will begin to ooze out which isn't very pretty.  Let them boil for four and a half minutes before removing them and running them under cool water for about a minute.  Using a knife, crack each egg in half and then spoon the egg into a shallow dish.  I like to have a small pat of butter sitting in the bottom of the bowl which helps make the egg yolk sauce a bit more creamy and saucy.  Chop eggs to desired consistently (I like a good chop) and then season with freshly ground salt and pepper.

  2. I have a love/hate relationship with eggs. Maybe from having chickens as a kid... when I was pregnant, I ate soft boiled eggs every single day. Sometimes twice. Proscuitto = yum.

  3. Scrambled with lots of salt...we call them salty-egs in our house. My husband is not happy that my kids use salt on their eggs now too!

    I love egg salad also.

    Off to cook eggs for breakfast!

  6. well, hmm I LOVE eggs! I love hardboiled eggs, eggsalad sandwiches...ohh yum! I love them scrambled and over medium so I can dip toast...my quick way when in a hurry is to crack on into a coffee mug put a pat of butter in it and mircrowave for a minute, stir and micro for one more minute...stir it and add lots of pepper...oh yeah...I might need to go make me some eggs! LOL

  7. So not weird! Soft boiled eggs are seriously a downright favorite and is underserved everywhere. I eat eggs almost every day and serve them soft boiled on Sundays...tomorrow :)

    Reading them all reminds me of Julia Roberts in Runaway Bride when she finally decides what type of eggs she likes although for the life of me I can't remember her final decision :) It also makes me very hungry!
